Peaches

What to do with your leftover peaches....

1. Make freezer jam.
2 Blend up and freeze in ice cube trays, place in freezer bags. Use as easy baby food.
3. Make Peach Jello Dessert
4. Make Soda Cracker Pie
5. Pour milk over fresh diced peaches. You could add a little powder sugar if you want it sweeter.
6. Put them on top of your Cheerios.

What are some of your favorites? I have a whole box of them left...

Cream Cheese Pie

This is also a recipe from my mom. We have huckelberries that we picked as a family, and they make me want to make this pie everyday.

8 oz Cool whip
8 oz cream cheese
1 cup powdered suger
1 tsp vanilla
1 graham cracker pie crust
1-2 cups fresh/frozen berries
1 package danish dessert

1. mix cream cheese and powder sugar together until smooth. 2 add in vanilla, mix until smooth. 3. Fold in cool whip. Lightly mix. 4. pour in pie crust. Refrigerate. 5 Make danish dessert per package directions for pie glaze. 6. Once pie glaze has cooled slightly and your fruit has been mixed in. pour on cream cheese mixture. Keep refrigerated for 2 hours or until glaze has set.

Soda Cracker Pie

This Recipe is from my mom. I remember having as a kid...LOVE IT!! Thanks mom


Soda Cracker Pie


3 Egg Whites (at room Temp.) Beat till frothy. Add 1/8 tsp. cream of tater. Dash of Salt. Beat egg whites until stiff, gradually adding 1 Cup of Sugar. Fold into stiffly beaten egg whites the following:

14 Soda Crackers Crushed
1/2 tsp. baking powder
1/2 tsp. vanilla
1/2 Cup chopped pecans (or walnuts)
Bake at 325 for 1/2 hr. (grease pan.)

Slice fresh peaches on cooled shell. Top with Whipped Cream. Keep in Fridge overnight or 4 to 6 hours. (Sometimes I don't keep that long, although it is better to be in the fridge a while)

My Mom doubles this recipe and puts it in a 9 X 14 Pan. If your not doubling it, use a 8 X 8 pan.

pumpkin bars

4 eggs
1 2/3 cup sugar
15 oz can pumpkin
2 cups flour
1 cup oil
2 tsp baking powder
2 tsp Cinnamon
1 tsp baking soda
1 tsp salt

beat eggs, sugar, oil, and pumpkin until fluffy. Stir in all the other ingredients and mix well

Bake 350 for 20-25 minutes in a jelly roll pan.

Frosting...

3 oz cream cheese
1/2 cup butter softened
1 tsp vanilla
2 cup powder sugar

Cream cheese and butter together. Then mix in vanilla and powder sugar.
frost on cooled bars
